Ingredients
6 servings
2 tspolive oil
1boneless skinless chicken thigh
cut into 1 inch squares
1green bell pepper
medium, seeded and diced
2andouille chicken sausages
medium, sliced
1 tspminced garlic
¾ cupchicken broth
1 x 10 ozcan crushed tomatoes
8 ouncesshrimp
raw, jumbo, peeled and deveined
1 tspsalt
2 tspcreole seasoning
6 cupsyellow rice
prepared
6 tspparsley
chopped
Instructions
Step 1
In a large saucepan over medium heat, add oil and heat 2 minutes. Add chicken, bell pepper, sausages, and garlic. Cook 5-8 minutes until chicken is browned on the outside.
Step 2
Add broth and tomatoes and allow to come to a boil. Stir in shrimp, salt, and creole seasoning. Reduce heat to low, cover, and simmer about 10 minutes or until shrimp and chicken are cooked through (shrimp internal temperature to 120F and chicken to 165F)
Step 3
To serve, scoop 1 cup yellow rice into a bowl, pile on the stew, and top with 1 teaspoon fresh parsley. Makes 6 servings
