1kgchicken drumsticks
2zest from lemons
4lemons
juiced
2garlic cloves
large, crushed
1 cupchicken stock
1 teaspoondried oregano
¼ teaspoondried thyme
¼ teaspoondried rosemary
1 tablespoonextra virgin olive oil
½ teaspoonsalt
½ teaspoonblack pepper

Instructions
Step 1
Preheat oven to 200 degrees Celsius, or 180 for fan forced
Step 2
Squeeze juice from lemons, it should be about 3/4 of a cup. Mix juice together with zest, garlic, herbs, stock, salt, pepper and olive oil
Step 3
Lay drumsticks in a medium baking tray, pour over the juice and stick mixture
Step 4
Cover the tray with foil and bake for 1 hour on the top rack of the oven
Step 5
Remove foil and switch the oven to broil/grill. Cook for a further 5 minutes or until the tops of the drumsticks are browned
Step 6
Serve drumsticks over a bed of rice and side of steamed vegetables, spoon over the sauce from the baking tray
