Step 1
Whisk together the eggs in a bowl. Peel and mash the banana and stir it into the eggs and add a little bit of baking powder.
Step 2
Heat a pan over medium-high heat and pour about 2-3 tbsp of batter into a frying pan for each pancake. Fry the batter on a medium heat for about 1.5 minutes until bubbles appear on the surface. Flip the pancake and cook on the other side for a few minutes until it begins to turn a golden color. Repeat this process for the rest of the batter.
Step 3
Serve the pancakes with the peanut butter and Skyr.
