Add starter and water to a large bowl and combine

Do 4 rounds of stretch and folds and let sit 30 minutes between each

Let rest for an hour

Divide and preshape dough

Rest for 30 minutes

Sprinkle with flour

Let sit overnight
Step 11
Score and bake at 450° F for 20 minutes in a covered Dutch oven and 10-20 minutes uncovered at 400°
