Instructions

Step 1
Place water in a large bowl.
Step 2
Add yeast in the bowl and stir.
Step 3
Add honey to bowl and stir, in order to speed up the fermentation.
Step 4
Add 2/3rds of the flour amount to the bowl little by little, and mix it up for about 5 minutes.
Step 5
Place a towel on top of the bowl and let the dough rest for 1 hr.
Step 6
The dough should now double in side but still be rather wet. Add the remaining flour, salt and olive oil and place the mixture on the counter.
Step 7
Knead the dough for a bit and add the remaining olive oil drops on top of the dough.
Step 8
Place a cling film on top of the dough and let it rest for another 1 hr. Place a towel on top of the film.
Step 9
Take out the cling film and cut the dough in half using a spatula.
Step 10
Cut the dough into balls of 250gr. each, then place them in a sheet pan. Sprinkle some flower on top of the balls and cover with cling film. Place another towel on top and let rest for 6-8 hours at room temperature.
Step 11
If you have to let rest for more than 6-8 hrs, then place the pan in the fridge. You can keep there for 4-5 days if necessary.
Step 12
When you are ready to make some pizza bases, make sure to let dough get back to room temperature before stretching it.
