For the Shrimp Marinade
20 ouncesshrimp
peeled and deveined
1 tablespoonolive oil
1 tablespoonlime juice
1 teaspoonchili powder
½ teaspooncumin
¼ teaspoonsmoked paprika
salt
to taste

For the fajitas
Instructions
Step 1
In a medium bowl, combine shrimp, olive oil, lime juice, chili powder, cumin, smoked paprika, salt, and pepper.
Step 2
Marinate for at least 10 minutes, or up to 30 minutes.
Step 3
Heat olive oil in a large skillet over medium-high heat.
Step 4
Add shrimp and cook until pink and curled, about 3-5 minutes.
Step 5
Remove shrimp from the skillet and set aside.
Step 6
Add bell pepper, onion, and garlic to the skillet.
Step 7
Cook for 5-7 minutes, or until vegetables are softened.
Step 8
Serve shrimp and vegetables on warm tortillas or lettuce cups.

Top with sour cream, guacamole, and cilantro, if desired.
