Ingredients

0.25 lbsuet
finely chopped, optional
6 lblean beef
coarsely cubed, get some fat on it if not using suet
1 Cupchili powder
real, ancho chili is best
2 Tbspcumin
2 TbspOregano
Mexican is best
2 Tbspsalt
1 TbspCayenne pepper
4 clovesgarlic
minced
2 quartsbeef stock
or beef broth
½ cupcornmeal
or masa hernia
½ cupwater
cold
Instructions
Step 1
Fry suet and beef or beef and oil if not using suet in Dutch oven 1 pound at a time removing each lb when done before adding next pound.
Step 2
When finished add all beef back into Dutch oven.
Step 3
Add seasonings and beef stock/broth.
Step 4
Simmer 1.5 to 2 hours.
Step 5
Skim off fat.
Step 6
In separate bowl thoroughly combine cornmeal and water.
Step 7
Add to chili.
Step 8
Simmer 30 minutes.
