Instructions

Step 1
1. In a covered frying pan/saucepan *fry bacon* (8-10 rashers, however meaty you want it!, chopped into small pieces) and *1 small onion*, finely chopped. If it's a non-stick pan you shouldn't need oil, otherwise use a little.

2. Add 2/3 courgettes* (depending on size) a crumbled *vegetable stock cube*, salt and pepper, and mix together and cover. *Cut these into round slices, then take a stack of however many you can hold together, and cut long ways into 3, then once or twice across the other way - basically into small pieces!
Step 3
3. Simmer for 10-15 mins until courgettes are really soft- then they'll go mushy through the pasta 😋
Step 4
4. Meanwhile cook pasta. Then drain, and stir bacon & courgette mix through pasta. Serve with a nice grated parmesan or grana padano.
Step 5
To make it extra special/authentic, use Parma ham instead of bacon... 😉
