Pita bread with sweet potato

Instructions

Step 1
Mix milk salt and flour together. Add 1 T of olive oil. Knead briefly. Wrap in cling film and refrigerate.
Step 2
Microwave peeled and chopped sweet potato 5 mins. Mash with 1 T water and 15 gr butter.
Step 3
Roll dough out to large circle.
Step 4
Lay 50 gr mozzarella in centre of disc leaving 10cm all around. Lay sweet potato mix on top. Finish with 50 gr of mozzarella cheese. Pull in the sides of the pastry in folds until you can cover the potato mix, allow air out before closing. Roll again into a large disc that will cover the bottom of a heavy frying pan.
Step 5
Brush bottom of pan with olive oil. Fry bread for 5 mins then brush the uncooked side with olive oil, turn the bread carefully using a board and fry the second side. Repeat both sides before serving it cut into triangles.
