Scramble the eggs in a bowl.

Cook the eggs in a pan with a bit of butter. Season to taste with salt and pepper. Remove to a bowl.

Pierce the sweet potato 4 or 5 times with a fork. Place on a microwave safe plate and cook for 5 minutes or until tender.

Cut the sweet potato potato into cubes and saute in the same pan with a bit of butter until browned. Season to taste with salt and pepper. Remove to a bowl.

Saute the bell pepper in the same pan with a bit of oil. Once it starts to soften, add the turkey sausage and taco seasoning. Continue to cook until the sausage is cooked through and browned.

Add the kale and 1/2 cup water to the pan with the sausage. Cover and let cook until the sauce is thick and the kale is soft. Remove to a bowl.

Place the tortillas on a plate, cover with a wet paper towel, and microwave for 30 seconds or until soft and pliable.

Combine the sauce ingredients in a bowl.

Place a tortilla on a plate. Top with 1/4 cup of cheese, 1/4 of the sweet potatoes, 1/4 of the egg mixture, and 1/4 of the sausage and kale mixture. Drizzle with 1/4 of the sauce. Roll. Repeat for the remaining burritos.

Wrap the burritos in tinfoil and store in the fridge until ready to eat.
