I basically follow the recipe on the box but leave out the protein and add crumbed tofu or a plant based schnitzel on top!
I usually make this on a Sunday night after a busy weekend, it soothes the soul 🥰
Btw in my opinion you shouldn’t bother with the mild one, it just has less flavour, the medium hot is not spicy at all and the hot is a little spicy!

Step 1
Bring a pot to medium heat with the oil
Step 2
Add in all the prepared vegetables and sauté for 2 minutes
Step 3
Add the water and simmer until potatoes are soft
Step 4
Add in the curry mix, turn off the heat and mix well until the cubes have dissolved completely and the sauce is thick
Step 5
Serve with some crumbed tofu or your favourite schnitzel and some rice! ❤️
