Instructions

Step 1
Started off with - sauteed onions (darkly fried / caramelized)- garlic herb oil (leftover from garlic knots probably - olive oil, garlic cubes, probably basil, oregano, some reed pepper flakes)
Step 2
Make chickpea pasti. I used Banza Cavatappi, ~7 minute timer after putting into boiling water.

Start making the sauce

Step 3
Warm up milk and some water (didn't use pasti water but the internet seems to recommend that for regular pasti).
Step 4
Start adding cheese into it to melt slowly, as well as some of the onions. Around 2:1 onion / cheese ratio in terms of volume, maybe? Idk just make a sauce and make it kinda runny. Let it simmer. Once simmered, add some spinach (~2 handfuls?) and chopped dates (I think I used 6 dates?)
Step 5
When pasti is done, drain and let dry, so it won't be too wet when frying.
Step 6
Meanwhile, toast some chopped walnuts.
Step 7
Fry the pasti in some garlic oil (1-2 tbsp) until they're getting a bit browned
Step 8
Add to the sauce, stir to coat pasti.
Step 9
Make a cheese kippah by putting some sauteed onions on a pan and covering with cheese. Broil cheese until yum.
Step 10
Serve on a big bowl, in a dome of pasti with a cheese kippah. Garnish with walnuts.
