1. Slice aubergine in half lengthwise, drizzle with oil & chilli flakes - Bake 45 mins at 180C

2. Mix honey, lemon juice, harissa and tahini in a bowl with splash of olive oil. Consistency of chocolate sauce (use water if too thick.)

3. Toast pine nuts for 1minute in hot pan.
Step 5
4. Aubergine on plate, pour sauce over, crumble feta, chopped parsley, pomegranate seeds and pine nuts.
