Smoked Sausage & Hummus Ciabatta with Apple–Onion Cider Glaze

A cozy, autumn-inspired dish that layers toasted ciabatta with roasted garlic hummus, smoky sausage, and a sweet-savory apple-onion glaze deglazed with apple cider. Perfect for a rustic dinner that feels both comforting and elevated, like fall on a plate. Adding a thin* layer of Dijon/Brown mustard before the hummus adds a slight tang that I enjoyed. If the mustard is too strong you can use mustard powder. That said, it's 100% delicious without it. Also, I ran out of apples on the second batch so I replaced it with apple sauce I had on hand. I added less cider and more thyme and it rounded it to take almost the same (albeit not "chunky".) The wife said it was the best meal she's ever had so I'll take that very high praise! Step 2 – Caramelize Apples & Onions 1. In a skillet, melt butter over medium-low. 2. Add sliced onion, cook until soft & golden (~8–10 min). 3. Add chopped apples, cook until softened and caramelized (~5–7 min). 4. Deglaze pan with a splash of apple cider, simmer until reduced and syrupy. 5. Season lightly with salt, pepper, and (optional) pinch of cinnamon/thyme.
