Step 1
Slice the aubergines into wedges lengthwise. Mix the baharat spice and honey with a good glug of olive oil. Toss the aubergine wedges in this glaze and spread out on a baking tray. Roast at 180°C for 25-35 minutes, until soft and coloured.
Step 2
In a bowl, mix the yoghurt, tahini, and the zest of a lemon. Season with salt and pepper and set aside.
Step 3
Into another bowl, grate the fresh tomato and crush or grate the garlic. Add a glug of olive oil and juice of the lemon, and season with salt.
Step 4
Toast some bread, and (optionally) toast some sesame seeds in a pan. Spread the yoghurt on a plate, top with the roast aubergines, drizzle with the tomato dressing and finish with the bread, sesame seeds and a sprinkle of lemon zest.
