Step 1
In a large stock pot throw in your butter , let it melt

Add in your chopped onions and shallots . Sauté

Add your chopped celery and carrots . Sauté.
Step 4
Add your salt and sauté veggies until semi soft.

Add bay leaves and fresh herbs. Leave them on the stems is optional.

Add in dried lemons

Wash the rice and add it in the pot. Sauté until all is mixed

Add diced zucchini and squash

Pour in the vegetable stock. And water to cover

Let the soup slightly boil until the rice is cooked. Enjoy !
