Vegan Peanut Stew

6 portions with rice for the freezer, very nice and reheats well

Spinach or curly kale also good sub for collard greens. Nice with bread/toast for dipping.

Decent as an occasional go-to. I ate it over rice, but would probably use less rice next time, as it absorbed a lot and made it quite thick.

Add carrots to bulk it up!

Needed to reduce the broth to 4 cups and increase the peanut butter a little.

We added pan fried tofu and reduced the amount of broth for 6 cups to 4 cups to make it more stew like. Ive tries many peanut stews and this one is my fav.

Would add some heat! Squeeze of lime on top helped too

I make this a while back. it was a great meat free meal.impotamt to serve with rice so filling and so it stretches the meal. Worthwhile making.
