High Protein Breakfast Burritos

A healthy, high protein take on a breakfast classic. You can modify it by going with a low carb tortilla or just using egg whites but I recommend going with the recipe as it is. 25-30g of protein and 350ish calories.• 8 large whole-grain or spinach tortillas

Ingredients

8whole-grain tortillas
large, or spinach
12eggs
large
1 cuplactose free milk
or a milk alternative
1 cupbaby spinach
chopped
½ cupfeta cheese
crumbled
16 ozturkey sausage
cooked and crumbled
1 cupred bell pepper
finely chopped
1 cupgreen onions
finely chopped
1 cupcottage cheese
¼ cupParmesan cheese
grated
salt
to taste
black pepper
to taste
Instructions
Step 1
1. In a large bowl, whisk together eggs and milk.
Step 2
2. Stir in chopped spinach, feta cheese, turkey sausage, red bell pepper, green onions, cottage cheese, Parmesan cheese, salt, and pepper.
Step 3
3. In a large skillet, scramble the egg mixture over medium heat until cooked through.

4. Warm the tortillas in a dry skillet or microwave.
Step 5
5. Divide the scrambled egg mixture among the tortillas, placing it in the center.
Step 6
6. Optional: Add salsa or hot sauce for extra flavor.
Step 7
7. Fold the sides of the tortilla in and roll it up into a burrito.
Step 8
8. Repeat for the remaining tortillas.
Step 9
9. Allow the burritos to cool before wrapping them individually in foil or plastic wrap.
Step 10
10. Refrigerate for up to 4-5 days.
