Hearty Breakfast Burritos

Need a hearty burrito recipe that will keep you full and is cowboy approved? Here it is! There are many different ways to make breakfast burritos and this is only one but it’s a good place to start if you aren’t familiar with making them. Sometimes I will add cheese, spinach, mushrooms, etc.

Step 1
Crack eggs into a bowl, add milk, season with desired seasoning (I use seasoned salt and pepper), whisk until combined. (Pictured)

Heat 1/2 olive oil into a skillet and add eggs once hot.

While eggs are cooking, add bacon onto a lined baking sheet and put into the cold oven. Turn the oven to 400° and cook the bacon for about 15 minutes (or until crispy) while you work on other steps.

Continue to stir eggs until they’re cooked. Chop onions, peppers, etc while cooking the eggs.

Once the eggs are done, place them into a large bowl. Sauté your onions, peppers, garlic, and green chiles. (Pictured)

While the onion mix is cooking, open bean cans and rinse them thoroughly before adding them into the egg mixture. You can also add in the chopped cilantro now. (Pictured)

Once onions are finished, place mixture in with the eggs. Now add half of the oil to the skillet and add the hash browns or potatoes. I use the dehydrated ones so I let them soak to rehydrate before step 1.

Season your potatoes with desired seasoning and then use this time to clean up your mess (lol) while also keeping an eye on the potatoes. (Pictured)

The bacon should be done about now, go ahead and pull it out of the oven and place it on a paper towel lined plate to cool.

Once the potatoes are done, add them to the egg mixture as well. Now add your turkey sausage to the skillet to cook.

While sausage is cooking, crumble the bacon into the eggs. Once the sausage is finished, add to the eggs and gently stir the whole mixture to combine evenly.

If you have followed this recipe exact, then you should have 17 big cups of the mixture.

Line a baking sheet with parchment paper or tin foil and spray with cooking spray. Now get out your tortillas and add 1 cup of the mixture to each tortilla.

Roll the tortilla and place on the baking sheet seem side down. Once the sheet is full, spray the tops of the burritos with cooking spray. Don’t skip this step!

Put the sheet of burritos into the oven and broil until the tops are golden. It takes about 7 minutes. (Pictured) This is a good time to clean up the rest of the kitchen and do the dishes.

Once the tops are golden, flip so the seem side is up and broil for about 3 minutes until golden.

Voila! Burritos are now done. I usually let them rest on the counter until cool and then flash freeze them by putting the baking sheet in the freezer until mostly frozen. Then, I wrap each burrito in tin foil and put in gallon ziplock bags with the date on them. They can be microwaved or reheated in the oven.
