or sub for English muffins, sourdough, toast, etc, toasted
6 slicesbeef bacon
1 teaspoonsbrown sugar

4slices american cheese
1avocados

¾ cupmayonnaise
¼ cupsour cream
1juice of lime
½ tablespoonhoney
½ teaspoonblack pepper
½ teaspoonchili powder
2 tablespoonsadobo paste
chipotle peppers
to taste pureed into a paste, to add spiciness

MAKE THE CHIPOTLE SAUCE

COOK THE EGGS, BACON, AND, BUNS

Step 4
To make the chipotle sauce, mix together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl. Once smooth, set it aside.
Step 5
To a pan over medium heat, add butter or oil. Crack the eggs in and allow it to cook low and slow.
Step 6
Break apart the yolks and slowly move the eggs around to make them scrambled and super fluffy. Optional, I love adding a bit of cheddar cheese to melt into the scrambled eggs!
Step 7
Add salt and black pepper to taste and once the eggs are fully cooked to the way you like them, take off the pan.
Step 8
Now it's time to cook the bacon. Add bacon to a hot pan over medium heat. Allow it to fry on one side until golden and crispy, then flip it over. Add a sprinkle of brown sugar if you'd like at this step and continue to cook. Once crispy and fully cooked, take off the pan.
Step 9
Toast the buns with a bit of butter or mayo on a pan or in a toaster.
Step 10
To each bun, add chipotle sauce, eggs, cheese, and avocado. Enjoy warm!
