15 ouncescan black beans
drained and rinsed

½ cupquinoa
cooked

½ cupcarrot
grated

½ cupzucchini
grated

¼ cupred bell pepper
chopped

¼ cupyellow bell pepper
chopped

¼ cuponion
chopped

2cloves garlic
minced

¼ cupbreadcrumbs

1 tablespoonground flaxseed
mixed with of water egg

1 teaspoonchili powder

½ teaspoonsmoked paprika

¼ teaspooncumin

salt
to taste

Instructions
Step 1
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Step 2
In a large bowl, mash black beans with a fork. Stir in quinoa, carrot, zucchini, bell peppers, onion, garlic, breadcrumbs, flax egg, chili powder, paprika, cumin, salt, and pepper.
Step 3
Form mixture into patties.
Step 4
Place patties on the prepared baking sheet and bake for 20 minutes, flipping halfway through.
Step 5
Serve burgers on buns with your favorite toppings, like lettuce, tomato, vegan mayo, and ketchup.
