Ingredients
4 servings

2 lbsskinless chicken thigh
consider bone-in

2canned chipotle peppers in adobo sauce
1 x 14.5can of fire-roasted tomatoes

3garlic cloves

1onion
chopped

3 tspkosher salt

0.5black pepper

1 tspcumin

1 tspmexican oregano
Extra optional spices
Instructions
Step 1
Plop all the ingredients into a Crock-Pot
Step 2
Let it braise on low for 6 hours or high for 3 hours
Step 3
Remove the chicken to cool. Set the Crock Pot to high. Use an immersion blender to turn the braising liquid into a smooth sauce. Shred the chicken with your hands and return it to the bubbling sauce.
