Instructions
Step 1
Season with spices and roast chicken at 375F for 30mins. Let cool and shred.
Step 2
In sauce pot combine tomato sauce with chili powder, cumin and garlic; salt if needed for taste. Heat until simmering, then remove from heat and let cool.
Step 3
In pan, saute pepper and onion until soft. Add in chicken and toss.
Step 4
In steamer, wrap tortillas in damp paper towel and steam until softer and pliable. Let cool slightly before handling.
Step 5
Dollop chicken and veggies into tortillas with 2tbs and a spoonful of sauce; roll tightly and place in baking dish. Repeat until made 8 enchiladas.
Step 6
Cover dish with remaining sauce. Top with remaining cheese. Bake in 400F oven for about 15 mins until cheese and sauce are bubbly.
Step 7
Remove and let cool; serve over bed of lettuce, spoonful of sour of cream, and guacamole if preferred. Enjoy!
