Instructions

Step 1
Prep the Veg: Rinse the cabbage, remove the core and slice it finely. Core then cut apple into slices. Peel & dice onion.
Step 2
Cook the Onions: In a large pot, melt the butter or heat the olive oil over medium heat. Add the onions and sauté until they’re soft and golden, about 5 minutes.
Step 3
Add the Cabbage and Apples: Add the sliced cabbage and apples to the pot, stirring to combine with the onions.
Step 4
Season: Sprinkle the brown sugar over the cabbage mixture and pour in the apple cider vinegar and stock. Stir everything together until well combined.
Step 5
Braise: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer gently for about 1 to 1.5 hours, stirring occasionally. Or, put a lid on the pot and pop into a 180C oven for an even braise. The cabbage should become tender and absorb the flavors of the apple, vinegar, and stock.
Step 6
Season and Serve: Once the cabbage is tender and the flavors have melded, season with salt and pepper to taste.
