Ingredients
7 servings

0.5 tblsoil

1 Conion
diced, medium red, white, yellow

1 tspminced garlic

water
5 C, with 2.5 vegetable bouillion cubes or 5 C vegetable broth

6 Crusset potatoes
chopped, or red, eightish small potatoes
1 bagfrozen brocooli
or 3 crowns of fres broccoli chopped

1lemon
juice, small

1can chickpeas
drained and rinsed, added in step 2, optional
Instructions
Step 1
In a medium pan, over medium-low heat, heat the oli. Add the onion and garlic and saute for 5 mintues or until the onion becomes tender and translucent
Step 2
Add the water and bouillion cubes (or broth), potatoes, broccoli, lemon juice, and pepper
Step 3
Bring to a boil. Boil until potatoes are cooked all the way through- 10-15 minutes
Step 4
Remove from teh heat. Puree half of the soup using an immersion blender. Return pureed soup to pot and combine with remaining soup.
Step 5
**note: this works great in the pressure cooker. Throuw everything in for 5 minutes then continue to step four. Replace lemon juice with 1/2 c nutritional yeast
