Step 1
Heat oil over medium heat add onions and cook for 3 to 5 minutes. Add garlic, carrots, celery thyme, oregano, salt, and pepper and parsley. Mix to combine & cook three minutes more. Add broth and beans. Bring to a boil. Reduce to a simmer for 15 minutes then stir in spinach or escarole.
