2 x 12 ouncecans of coconut milk
2 cupschicken stock
2 tablespoonsfish sauce
2 tablespoonsbrown sugar
2 tablespoonspeanut butter
1.5 poundschicken breasts
cut into 1 1/2 inch pieces
1red bell pepper
seeded and sliced into 1/4 inch slices
1onion
thinly sliced
1 heaping tablespoonfresh ginger
minced
1 cupfrozen peas
thawed
1 tablespoonlime juice
cilantro
for garnish
2 cupswhite rice
Instructions
Step 1
Mix curry paste, coconut milk, chicken stock, fish sauce, brown sugar, and peanut butter in a 4 1/2 - 6 Qt slow-cooker bowl.
Step 2
Place the chicken breast, red bell pepper, onion and ginger in the slow cooker, cover and cook on high for 4 hours.
Step 3
1/2 hour before finishing, Add in the peas and cook for 1/2 hour longer. Place white rice in rice cooker and turn on.
Step 4
Stir in lime juice and serve with cilantro and white rice.
