Instructions
Step 1
Cut beef sausage into quarter rounds
Step 2
Brown sausage until most of the fat has rendered off into the pan
Step 3
Deglaze with heavy cream and/or a little pasta water
Step 4
Bring to a low boil or simmer, wait for sauce to emulsify
Step 5
Add mostly-cooked pasta to sauce along with more pasta water, add sausage back in if put on a plate
Step 6
Garnish with chives
