1 lbground pork breakfast sausage

8 ozhot green chilis
undrained
6 oztomato paste
4 Tbspbutter
¾ cupflour
3 cupsmilk
16 ozcheddar cheese
grated, divided
1 bunchgreen onions

Instructions
Step 1
Preheat oven to 350. Spray large casserole dish.
Step 2
Boil penne. Drain. Set aside.
Step 3
Brown beef and sausage together. Heavily salt and pepper. Drain.
Step 4
Add chopped poblano and small amount of olive oil. Sauté until poblano is soft.
Step 5
Add green chilis, Rotel, tomato paste, and butter. Cook until butter melts. Add flour. Stir.
Step 6
Add milk. Warm. Add 3/4 of grated cheese. As cheese melts, add additional salt and pepper.
Step 7
Mix penne and cheese mixture together in the same pot. Mix in chopped green onions.
Step 8
Pour into casserole dish and bake uncovered for 40 minutes until bubbly. Sprinkle the rest of the cheese on top and broil until golden brown.
Step 9
Remove from oven and top with your choice of toppings.
