Mash banana in medium bowl
Step 2
In separate small bowl mix flaxseed meal and water to make “flax eggs”
Step 3
Let flax eggs sit for 10-15 min-until gelatin
Step 4
In a separate bowl, mix together almond flour, tapioca, and mashed banana
Step 5
Add flax eggs to mixture-your batter will be runny and have a few chunks of banana left-stir in cinnamon
Step 6
Heat a griddle or pan over medium heat
Step 7
Melt 1/4 tsp butter on the pan. Drop pancakes on the hot griddle or pan about 2 tbsp for each pancake (they hold together better if they are small)
Step 8
Batter will be thick and need to flatten to “pancake” on pan
Step 9
Cook 2-3 min each side (on medium to medium high hit with coconut oil)-cook low to slow to avoid a raw middle
Step 10
Serve warm with drizzled almond butter
