Instructions
Step 1
Bring a large pot of salted water to a boil. Once water is boiling, add spaghetti and cook, stirring occasionally until al dente, 9:00 to 11 minutes. Once ready, reserve 1 cup of pasta cooking water and then drain
Step 2
Meanwhile, wash and dry produce. Trim and halve zucchini lengthwise; cut crosswise into quarter inch thick half moons. Thinly slice chili.
Step 3
Heat a large drizzle of olive oil in a large pan over medium-high heat. Add zucchini and as much chili as you like; Cook, during occasionally cook until zucchini is lightly browned.
Step 4
Rinse shrimp under cold water and pat dry with paper towels. Push zucchini mixture to one side of pan, at another large drizzle of olive oil to the empty side, and add shrimp to cook. Stir occasionally until opaque and cook through.
Step 5
Add spaghetti, garlic butter, the parmesan, and as much cooking water is desired for sauce consistency to pan with shrimp mixture. Season generously with salt and pepper.
Step 6
Toss until fully combined. Garnish with additional parmesan or remaining chilies.
