I’m starting this recipe with a BOLD STATEMENT! Fun food is not evil, you can enjoy a cookie! How? Well, we are building an aware community here. Aware of what we put in our bodies and how it effects it. So, how about we step it up a notch here and have a little wonder. What are some of the differences between a holistic dessert and a regular dessert? Ok now, how about similarities? Do you think there are similarities between the two? Well of course there are similarities! 1. They are both food :) 2. They both serve a purpose! 3. Ingredients :) When I say ingredients, well the usual suspects are: flour, sugar, fat Holistic cookies would use whole ingredients, that would give us a better nutritional profile. So using whole flour instead of processed flour, also using whole & unrefined sugar instead of refined, But is that enough? What do you think? If the habits that caused the illness still exist after the change of diet then we have nothing to expect other than lack of improvement. Would you like to talk about this further? Start a conversation :) So, Cookies. Cookies are basically butter and sugar creamed and then mixed with flour and flavoring. So, choosing the sugar and butter is essential here for me to create a better treat. Here I will show you how to make holistic changes to make the dispensing of glucose into the blood stream controlled.

Instructions

Step 1
I am adding peanuts to my recipe, so I’ll activate in advance. Or you can roast the peanuts prior to making the cookies. Please read How to: Nuts. For both roasting and activation information.
Step 2
Preheat the oven 175 degrees. Place peanuts on a tray and roast for 6 to 8 minutes. Shake mid way. Once out of the oven place on a kitchen towel or a strainer to shake the skin off. Then crush the peanuts into different sizes of chunks.
Step 3
Now for the Cookies, we start with whisking the sugars and fats together. This is called creaming, so in a bowl whisk the maple syrup, panela, peanut butter & coconut milk together. You can replace panela with any unrefined sugar you prefer.
Step 4
Examples of unrefined sugars from around the world: Jaggery is used in India and found in Ayurvedic recipes. Panela used in Colombia, Venezuela & Ecuador. Palm & Coconut sugars in Asian cuisines.
Step 5
In a different bowl mix together the dry ingredients. And the crushed peanuts to the dry mix.
Step 6
Add the dry to the wet.
Step 7
Refrigerate for 15 to 25 minutes.
Step 8
Scoop a ball out and place on a baking tray. Do not crowd the cookies. They won’t spread much but I like to give them room.
Step 9
If you like to sprinkle sea salt flakes on the cookies, this is when to do so :)
Step 10
Into the preheated oven, 175, cook for 10 to 15 minutes.
Step 11
Once out of the oven, place on a cooling wrack, enjoy with loved ones.
