Instructions
Step 1
Cut mango, cauliflower, onion, ginger and garlic in chunks.
Step 2
Heat up oil in a pan and add ginger and garlic.
Step 3
Stir it till they’re golden and add the cauliflower and onions to it. Reduce the heat and add a little bit of coconut milk in it.
Step 4
Now add the curry powder, garam masala, chickpeas and the rest of the coconut milk. Let it cook for 10min on medium heat.
Step 5
After 10min add the mango chunks and more curry powder such as salt and pepper and cook for another 2-5min.
Step 6
Remove from heat and serve with rice or bread.
