Instructions

Step 1
Rinse lentils in cold water until the water runs clear.
Step 2
Add coconut oil to a large skillet and put it on medium heat. As soon as the oil is shimmering, add the garlic, ginger and fresh turmeric and cook for about 2 minutes while stirring.
Step 3
Add the cumin, chilli powder, garam masala, salt and pepper and cook for about 30 seconds.
Step 4
Pour in vegetable broth and add lentils such as crushed tomatoes and mix well. Reduce to low heat and cover the pan with a lid. Simmer for 20 to 25 minutes or until the lentils are cooked.
Step 5
Add the coconut milk, almond butter and salt and pepper while continuing to cook for about 5 minutes.
Step 6
Optional stir in lemon juice and cilantro. Cook as long as the lentils thickened up and everything is creamy.
