Slow Cooker Lemon, Garlic, Butter Chicken

Apologies for the bad pic...forgot to take one prior to serving! Easy leave to cook slow cooker/Foodi recipe. Served with mash, made using some of the butter/juice and milk.

8Chicken Thigh

4carrots

2Parsnips

3Celery
sticks
1 tablespoongarlic powder
1 tablespoonOnion Powder
½ teaspoonDried Chillis
crushed
½ teaspoonsmoked paprika
1 teaspoonitalian seasoning
4Garlic Cloves
crushed, mashed
125gsalted butter
0.5lemon
zest
1Juice Lemon
125mlchicken stock
salt
to taste
pepper
to taste
Instructions
Step 1
Chop onion, celery, carrot and parsnip into 1cm chunks and add to slow cooker pot.
Step 2
Lay Chicken Thighs on veg base.
Step 3
Combine Lemon juice, zest, chicken stock and pour over chicken.
Step 4
Combine Garlic powder, Onion powder, Crushed Chillis, Smoked Paprika, Italian Seasoning and salt/pepper to taste into a small pot.
Step 5
Sprinkle over the dry mixture onto the chicken thighs.
Step 6
Chop Butter into sticks and place randomly across the chicken. Sprinkle the crushed Garlic.
Step 7
Set slow cooker to High and cook for 4 hours.
Step 8
If using a Foodi, air fry for 10-15 minutes to brown/crisp chicken. (Optional)
