Step 1
1. Dice carrots, onion, and celery and heat in a pot with olive oil (med heat) 2. After 5 min. Add garlic. 3. Drain and wash 4 cups of navy beans. 4. Add beans, broth, thyme, salt, pepper, and red pepper flakes to pot and simmer for 15-20 minutes. 5. Add Kale and simmer another to minutes. 6. Add lemon juice and parmasan cheese. 7. Top each bowl with additional cheese! Serve with crusty bread or cornbread.
