MEXICAN MEALS FOR WEIGHT LOSS: LENTEJAS EN SU JUGO 🥑 Many of you have requested carne en su jugo and I’m still working on it BUT I am proud to bring you this lenteja version that substitutes the meat options for leaner cuts to make it more macro friendly. It’s perfect for this cold weather and can be frozen for up to 3 months!

Step 1
1. Rinse the lentils and put to the side.
Step 2
2. Roast the tomatillos, 1/4 onion, 3 garlic, and jalapeño using your preferred method. (Air fry at 375° F for 8-10 minutes)

3. Once roasted, blend with cilantro, low sodium chicken bouillon, and 1/2 cup water. Put to the side.
Step 4
4. Heat a pot with ~12 cups of water
Step 5
5. Add the lentils and cover. (lentils need 45-50 minutes to cook so set a timer)
Step 6
6. Chop 1/4 of an onion and bacon.
Step 7
7. In a separate pan, add the bacon and cook for 5 minutes or until cooked through. Remove from the pan.
Step 8
8. Add the ground beef and season with salt and pepper.
Step 9
9. After 5 minutes, add the onions and cook for 3-4 minutes or until translucent.
Step 10
10. Add the bacon back to the beef mixture or keep to the side (this is a preference)

11. Add the beef mixture and salsa verde to the lentejas. Mix well and cover.

12. If needed add more water and/or seasonings.

13. Cook until lentils are firm enough to hold their shape but can be smashed with a spoon.
Step 14
14. Each serving is 2 cups of lentejas. Add toppings of choice - 40 grams of avocado in video.
