Instructions

Step 1
Cook 1 cup of white rice (preferably basmati) according to package instructions. Let it cool completely.
Step 2
In a large mixing bowl, combine the cooked and cooled rice, maltodextrin powder, almond butter, 45g honey or maple syrup, vanilla extract, and a pinch of salt.
Step 3
Mix the ingredients together until you have a consistent and sticky mixture.
Step 4
Fold in the chopped nuts and, if desired, mini chocolate chips or dried fruit. This adds texture and additional flavor.
Step 5
Take small portions of the mixture and roll them into bite-sized balls using your hands. If the mixture is too sticky, you can wet your hands slightly to make it easier to handle.
Step 6
Place the energy balls on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
Step 7
Once the energy balls have hardened, transfer them to an airtight container and store them in the refrigerator. They can be kept for several days. Wrap them individually in plastic wrap for easy single-serve carry or just put a few in zip-lock bags for easier access
