Step 1
Meanwhile, heat a medium saucepan on medium heat with a drizzle of oil. Add the garlic and remaining thyme sprigs and fry until fragrant, 30 secs. Add the cannellini beans and the water for the beans (see pantry). Warm through, stirring regularly, until the beans have softened, 3-4 mins.
Step 2
When the cannellini beans have finished cooking, remove from the heat. Remove the thyme and discard. Drizzle with olive oil, then season with ¼ tsp salt and pepper.
Step 3
Crush with a potato masher until smooth.
