Instructions
Step 1
Cut onions, peppers and courgettes into medium sized chunks
Step 2
Add olive oil to pan and soften veg
Step 3
Add tinned tomatoes and puree
Step 4
Add stock, harissa and spices. The stock may need some water to mix well.
Step 5
Stir and simmer with the lid on for 40 minutes until the veg is as soft as you like whilst stirring.
Step 6
Simmer for 10 minutes more with the lid off to ensure any added water is cooked off.
Step 7
Serve and enjoy with added feta or cheddar. Can also be served with butter beans and rice.
