Step 1
Roast the red pepper ahead of making the soup
Put the kettle on for the stock while you chop the onion & garlic
Fry the onion and garlic.
Add the peppers.
Add the lentils, chopped tomatoes and stock.
Add the herbs and season to taste.
Simmer for 30 mins.
Blend.
Serve with fresh basil.
