¼ cupcoconut yogurt
or cashew yogurt for a nut-free option
1 tablespoontomato paste
1 teaspoongaram masala
½ teaspoonsmoked paprika

ground cardamom

¼ cupvegetable broth
¼ cupdiced tomatoes
¼ teaspoonbrown sugar

Instructions
Step 1
Marinate the salmon: In a bowl, combine coconut yogurt (or cashew yogurt), tomato paste, garam masala, smoked paprika, turmeric, cardamom, and salt and pepper. Coat the salmon fillet with the marinade and let it sit for at least 10 minutes.
Step 2
Simmer the sauce: In a saucepan, combine vegetable broth and diced tomatoes. Bring to a simmer and cook for 5 minutes.
Step 3
Cook the salmon: Add the marinated salmon to the simmering sauce and cook for 5-7 minutes, or until cooked through and flakey.
Step 4
Finishing touches: Stir in the brown sugar (optional) and adjust the seasoning to taste.
Step 5
Serve with flair: Serve the tikka masala immediately with a squeeze of lime wedge and garnish with fresh cilantro (optional).
