This treat is an energy pick me up.
Yes, this is a sugary boost, but how does it differ from eating a piece of candy? And what is a sugar rush?
Well a sugar rush is simple sugars being absorbed really fast by our blood and that would in turn power our bodies by supplying our adorable cell with sugar. If you are familiar with the jitters of a sugar rush, then you realize how draining that could be and the crash that comes after is simply depleting.
Well, dates is sweet yes but it not just made up of sugar, in there we have fiber, and many minerals and vitamins.
Another way to control the release of glucose into our blood stream when having a treat is to include a source of good fat and protein. Like nuts and seeds.
Another tip here is; try to have regular meals at regular times. And enjoy your treat after a meal.
This is an easy way to ensure the stabilization of your blood sugar.
Oh and, a person of mine likes to enjoy my treats with her coffee, so if you are like her and during your coffee me time, please make sure you have a tall glass of water.
If you like, you can dip the balls in melted dark chocolate or sprinkle with raw cacao powder.

Step 1
Measure the ingredients.
Step 2
Let’s start with the coconut flakes, you can use desiccated coconut if you like, and you can also use the pulp left from making coconut milk.
Step 3
If using desiccated coconut or pulp coconut, preheat your oven to 150 degrees celsius, spread the coconut on a tray and cook until lightly toasted.

Now the almonds, activate or roast your almonds. Please read How to: Nuts in the recipes to learn more about this topic and learn the techniques.

I like to roast the almonds for flavor here. So i activate first and then roast in the oven.
Step 6
Once cool down, crush the almonds into irregular sizes and shapes.

Off to the dates, date paste is convenient to use plus it gives the treat a creamy texture.

Oil your hands. Mix all the ingredients in a bowl.
Step 9
Divide the balls to your preferred size.
Step 10
I recommend 15g balls. The pic above is around 25g.

On an oven tray they go. And into the preheated 170 degrees celsius oven. Bake for 5 to 10minutes.
Step 12
Once cool, you can dip in dark chocolate or dust with raw cacao powder.
