Instructions

Step 1
Preheat oven to 375 degrees. Lightly coat a 8-inch pie pan with olive oil.
Step 2
Dice the broccoli or substitute vegetable and toss with olive oil.
Step 3
Roast vegetables for 15 minutes or until just fork tender.
Step 4
Remove vegetables from oven. Set aside to cool.
Step 5
Chop spinach and herbs. To a medium-sized bowl add all the ingredients and mix well.
Step 6
Pour the mixture into the prepared pie pan. Bake for 25 minutes or until a knife inserted in the middle comes out clean.
