Instructions
Step 1
Cook the brown rice according to package instructions and let it cool. OR Make a batch of Spanish rice
Step 2
In a large mixing bowl, add cooked brown rice, black beans, grilled corn kernels, diced tomatoes, diced avocado, and diced red onion.
Step 3
In a small mixing bowl, whisk together Greek yogurt, fresh lime juice, honey, chopped chipotle pepper in adobo sauce, minced garlic, and salt.
Step 4
Drizzle the chipotle-lime dressing over the bowl and toss everything together until well combined.
Step 5
Sprinkle chopped fresh cilantro over the top and serve with lime wedges.
