Cod in a Cheesy Sauce with Carrots & Peas

Instructions

Step 1
To make the sauce, melt the butter in a saucepan over a medium heat, then add the onion and carrot and saute for 8 minutes until just soft. Stir in the flour then gradually stir in the millk.
Step 2
Once all the milk has been incorporated, bring the sauce to the boil and cook, stirring until thickened.
Step 3
Stir in the chunks of cod and simmer gently for 2-3 minutes.
Step 4
Add the peas and Parmesan and simmer for 2 minutes. Add the chives and serve.
