Step 1
In instant pot, sauté onion, carrots, & celery til soft, then add garlic, chopped potatoes (skins on or peeled, did some peeled, some not), broccoli chopped into bite size, mushrooms chopped. Sauté a bit & add spices. Then add broth & set instant pot for 15-20 min. Taste & add salt if need. Smash some of the potatoes to thicken soup. Add cream w cornstarch to make thicker & creamy.
