16 ouncesboneless skinless chicken breasts
thinly sliced

1 tablespoonolive oil

1 tablespooncajun seasoning

½ teaspoonsmoked paprika

¼ teaspoongarlic powder

¼ teaspoononion powder

1bell pepper
sliced, choose any color red, green, yellow, orange

1onion
sliced

1zucchini
small, sliced, optional

4tortillas
large

avocado
Fajita toppings

Instructions
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2
In a large bowl, toss the chicken with olive oil, Cajun seasoning, paprika, garlic powder, and onion powder.
Step 3
Spread the chicken on the prepared baking sheet in a single layer. Arrange the sliced bell pepper and onion around the chicken.(Optional) Add the sliced zucchini if using.
Step 4
Roast for 20 minutes, or until the chicken is cooked through and slightly browned.
Step 5
While the chicken is cooking, warm the tortillas in a dry skillet or microwave to soften them.
Step 6
To assemble the fajitas, divide the chicken and vegetables evenly between the tortillas. Top with your favorite fajita toppings.
