Instructions

Make the Roasted Red Pepper Sauce

Step 1
In a saucepan over medium heat, melt butter. Sauté garlic until fragrant (about 1 minute). Add chopped roasted red peppers and cook for 2–3 minutes. Stir in heavy cream and Cajun seasoning. Simmer for 5–7 minutes until slightly thickened. Stir in Parmesan until melted and smooth. Season with salt and pepper to taste. Keep warm.

Prepare the Chicken

Pound chicken breasts to ¼-inch thickness. Season both sides with Cajun seasoning, garlic powder, salt, and pepper.

Stuff and Roll

Divide mozzarella and pepper jack cheese evenly across each chicken breast. Roll tightly and secure with toothpicks if needed.

Sear the Rollups

Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken rollups for 2–3 minutes per side, until golden all around.

Bake

Preheat oven to 375°F (190°C). Transfer skillet to oven and bake for 20–25 minutes, or until chicken is cooked through and juices run clear.

Serve
