Instructions
Step 1
Boil water in a pot and add tuna let it cook, set aside. Rinse quinoa in a fine mesh strainer and drain well.
Step 2
In a medium saucepan, bring water to a boil. Add quinoa and salt, and stir to combine.
Step 3
Reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
Step 4
Remove from heat and let stand for 5 minutes.

Fluff with a fork and transfer to a large bowl.
Step 6
Add black pepper, cumin, paprika, garlic powder, onion powder, and cayenne pepper to the bowl and stir to combine.
Step 7
In a small bowl, whisk together lemon juice and olive oil.

Pour over quinoa mixture and toss to coat. Add cooked tuna.

Add spinach, parsley, cilantro, mint, basil, dill, chives, scallions, red onion, yellow onion, green onion, shallots, garlic, ginger, turmeric, fennel, and celery to the bowl and toss to combine.

Serve immediately or refrigerate for up to 3 days.

In a large pot boil water and add cocoa powder, stir and mic well. Let cooldown and refrigerate until cold. In each glass serving add the cold cocoa and crushed ice. Serve cold or chilled.
